Title : Antioxidant activity and comparative study of okra (Abelmoschus esculentus) pods, seeds, and leaves

Abstract:

Okra; (Abelmoscus esculentus L.), is a special plant with a rich history, cultural importance, and good nutrition. Okra's antioxidant content, including vitamins C and E, polyphenols, flavonoids, and carotenoids, make it a potent natural defender against oxidative stress. The objective of this study was to elucidate the variations in antioxidant activity between okra seeds, pods, and leaves. To achieve this, the total antioxidant activity of all three samples was evaluated employing the DPPH free radical scavenging assay, while the total phenolic and flavonoid contents of each sample were quantified using the Folin-Ciocalteu and ALCl3 colorimetric assays, respectively. Additionally, phytochemical screening was conducted on the samples, followed by the determination of GSH levels of the extracts and an exploration into the impact of the extracts on cellular GSH levels. The study showed that okra plant components, including the seeds, pods, and leaves, contain high levels of phenolics and flavonoids and; demonstrate remarkable antioxidant properties. Aqueous extracts from okra seeds contained the highest concentrations of these compounds. All extracts contained substantial levels of GSH and exhibited significant antioxidant potential, however, okra seeds possess the highest level of this potential. Further studies are warranted to further characterize the okra parts.

Significance

This study's outcomes may have significant implications for the development of antioxidant-based therapies for the prevention and management of oxidative stress-related diseases. By investigating the antioxidant activity of different parts of the okra plant, we're gaining insights that could directly influence the development of therapies targeting conditions like cardiovascular disease, diabetes, and neurodegenerative disorders. This research not only underscores the potential of natural antioxidants in okra but also opens new avenues for harnessing these bioactive compounds in future therapeutic strategies.
The results from this study provides valuable insights into the potential health benefits of different parts of the okra plant, which could inform dietary recommendations and food product development. By understanding the unique antioxidant properties of okra pods, seeds, and leaves, we can better tailor dietary recommendations and innovate in food product development. This research paves the way for utilizing okra in novel ways within the food industry, potentially enhancing the nutritional quality of diets and promoting overall health.

Mr.  Yussif is a young and motivated researcher seeking to apply his knowledge and passion for medical research to contribute significantly to scientific advancements. He pursued an undergraduate program in Biochemistry, Cell, and Molecular Biology at the University of Ghana, Legon, completing in 2023.

During his undergraduate studies, Mr. Yussif conducted his project work under the supervision of Prof. Regina Appiah-Opong, focusing on investigating the antioxidant properties of Okra. Currently, he serves as a national service personnel, fulfilling the role of a research assistant at the Noguchi Memorial Institute for Medical Research, University of Ghana.
